Healthy Valentine Ideas
Valentines Day is truly one of my favorite holidays. I love its simplicity, its acts of random kindness, and its beauty. But, the one thing I don’t like is that it tends to be a sugar festival! The boxed chocolates, the sugar cookies, the cakes, the candies…they can all be so overwhelming and so bad for our bodies. So, take a break from all the sugar this Valentines Day and serve some healthy treats to your kids, your friends, or your spouse. Below are just a few creative ideas to get you started.
Strawberries and red grapes on a skewer
Heart-shaped cheese served with crackers…on a red platter
Layer plain or vanilla Greek yogurt with raspberries in parfait glasses; sprinkle the tops with a little granola
Strawberry Smoothie made with plain Greek yogurt, frozen strawberries, honey, milk and crushed ice
Salad topped with cucumber and red pepper-shaped hearts (use a mini heart cookie cutter)
Strawberry Coconut Overnight Oats:
2 c. rolled oats
1 c. strawberries, pureed
3 c. coconut milk
¼ c. unsweetened coconut
¼ c. chia seeds
2 Tbsp pure maple syrup
½ tsp. vanilla
Mix together and leave in refrigerator overnight. Serve in glasses and top with strawberry halves. Makes two generous servings for you and your sweetie to enjoy for breakfast.
